Healthy Holiday Harvest: Cheesy Potatoes

Who can have a Thanksgiving meal without potatoes? Well, believe it or not, you can get all of the deliciousness of cheesy potatoes with less fat and calories! Our Healthy Holiday Harvest continues today with a lower-fat version of our favorite treat – Cheesy Potatoes!


1 pound (about 4-1/2 cups) hash brown potatoes, thawed
1 can (10-3/4 ounces) Campbell’s Healthy Request Cream of Chicken soup (do not add water)
1/2-cup fat free milk
1/2-cup light sour cream
1-1/2 cups reduced fat cheddar cheese

In a large bowl, combine all ingredients and mix well.  Spray a 7-inch by 11-inch casserole dish with vegetable cooking spray.  Spread potato mixture in casserole dish.  Bake uncovered at 350 degrees for 35 to 45 minutes or until bubbly around the edges and cheese is melted.
