Healthy Holiday Harvest: Cranberry Relish

Our Healthy Holiday Harvest continues this week with some great ideas for healthy Thanksgiving appetizers courtesy of Toni Kuehneman, MS, RD, LMNT, Cardiac Dietitian, Alegent Creighton Health Heart & Vascular Institute. This recipe is so easy, and it’s fat free and about 50 calories per serving! It is a fun recipe for the kids to help – have them peel the oranges and measure out the sugar – they’ll love being able to help make such a sweet treat!

Cranberry Relish

1 package (12 oz.) fresh cranberries
1 medium orange, peeled and sectioned
¼ to 1/3 cup sugar

Rinse and drain the cranberries.  Place cranberries and peeled orange sections in food processor.  Process until fruit is minced (very fine pieces).  Place minced fruit in a bowl.  Add sugar to taste.  Mixture will become moist and form a relish as the sugar is added.  Refrigerate overnight.

Makes 8 servings
Serving size: ¼ cup
Calories per serving: 47 with ¼ cup sugar; 52 with 1/3 cup sugar
Carbohydrate: 12 grams with ¼ cup sugar; 14 grams with 1/3 cup sugar
