Healthy Holiday Harvest: Green Bean Caesar

Our Healthy Holiday Harvest continues this week with some great ideas for healthy Thanksgiving side dishes courtesy of Toni Kuehneman, MS, RD, LMNT, Cardiac Dietitian, Alegent Creighton Health Heart & Vascular Institute. This Green Bean Caesar side is a great alternative to the traditional green bean casserole. But, if your family can’t stray from the traditional green bean casserole, Toni suggests purchasing the Campbell’s healthy request soup, drain and rinse the canned green beans, and crush croutons for the topping instead of the fried onions.  Place croutons in a plastic bag and using a rolling pin, roll over them to crush the croutons.


1-1/2 pounds of fresh green beans cooked or 2 cans (14.5 oz. each) “no salt added” green beans
2 Tbsp. canola oil
1 Tbsp. vinegar (I used balsamic vinegar)
1 Tbsp. minced onion
1 clove garlic minced or ½ tsp. dry minced garlic
1/8 tsp. pepper
2 Tbsp. plain bread crumbs (can use Panko bread crumbs)
2 Tbsp. grated Parmesan cheese
1 Tbsp. reduced calorie margarine, melted

Heat oven to 350 degrees.  Toss beans with oil, vinegar, onion, garlic, and pepper.  Pour into ungreased 1 quart casserole.

Stir together bread crumbs, cheese, melted margarine.  Sprinkle over beans.

Bake uncovered in oven 15 to 20 minutes until heated through.
