Heart Healthy Recipe: Strawberry Yogurt Cake

176958943February is Heart Health Month and we’re providing you with several tasty recipes that encourage a healthy lifestyle. Here’s a dessert that will keep you on track to eating healthy while still enjoying a little bit of “sweet” in your life — just in time for Valentine’s Day!

Strawberry Yogurt Cake
1 package white cake mix, dry
3/4 cup water
12 ounces lite strawberry yogurt
1/3 cup oil
3 egg whites, beaten till stiff

Frosting:
Cool Whip (8 oz.)
12 ounces lite strawberry yogurt

Mix first four ingredients. Beat at medium speed of electric mixer for 2 minutes.

In a separate bowl, beat the egg whites. Fold egg whites into cake mixture.

Spray the bottom only of a 9 x 13 inch baking pan with vegetable cooking spray.
Pour the cake mix into the pan. Bake at 350 degrees for 33-35 minutes.

Remove cake from oven and cool on wire rack. When cool, prepare frosting.
Mix Cool Whip and yogurt. Spread over the cake. Store in refrigerator.
