Make Dinner a Happy Time – No Need for Fancy

Eating together at home with our families doesn’t have to be fancy or complicated. The other night I served peanut butter and jelly sandwiches, with milk, and a side of strawberries. It isn’t my husband’s favorite meal but he always makes sure to set a good example to our children by not complaining and thanking me for making dinner.

To make the most out of family meal times we turn off the TV, and don’t answer the phone during dinner. We have also been working on teaching our kids to not make negative comments about the food being served. We have them try at least one bite and often they are surprised that they actually like it. We also try to keep “food” talk to a minimum during dinner and focus on the highlights of our day and days to come.

My best advice I have in making happy, healthy dinners is creating weekly meal plans, and remembering a healthy meal doesn’t have to be difficult to prepare. An example of a healthy and easy meal is turkey pesto wraps, one of my family’s favorites!

Turkey Pesto Wrap

1 serving

1 (8-inch) flour tortilla

1 T. reduced fat cream cheese

1 T. prepared pesto

2 oz. lean ham or turkey, thinly sliced

¼ c. tomatoes, diced

¼ c. cucumbers, diced


1. Spread tortilla with cream cheese and pesto.

2. Add meat, tomatoes and cucumbers.

3. Roll tortilla up.
