Spicy Veggie Chili

There is no better way to warm up a icy cold winter day than with a warm cup of chili! Our friends at UNL Extension have provided a delicious recipe for spicy veggie chili. It has all of the warm, deliciousness of chili, with only 280 calories and 3.5 grams of fat per serving. Give it a try, and please let us know what you think!

Spicy Veggie Chili
6 servings
1 T. vegetable oil or olive oil
½ c. onion, chopped
2 garlic cloves, minced
1½ c. zucchini, chopped
1 c. red or green pepper, chopped
4 c. tomatoes, chopped
1 T. chili powder
¼ tsp. pepper
1½ c. vegetable juice
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can kidney beans, drained and rinsed
1 jalapeño pepper, minced (optional)

1. In a large saucepan, heat oil over medium-high heat.
2. Add onion and garlic.  Cook 2 minutes or until tender, stirring constantly.
3. Add zucchini and bell pepper.  Cook 5 minutes, stirring often.
4. Add remaining ingredients, stirring well to combine.
5. Cover, reduce heat, and simmer 20 minutes, stirring occasionally.
6. Serve hot.
