Waffle Iron Grilled Cheese

Cool weather is around the corner and one of the comfort foods we all love is a grilled cheese sandwich with a steamwafflepixwebing bowl of soup.  Unfortunately, a  “classic” grilled cheese sandwich can provide half of your day’s fat and sodium needs.  Here is a fun and a healthier version of the “classic” grilled cheese sandwich.  This version is 37% lower in calories, 42% lower in fat, and 31% lower in sodium than the “classic” grilled cheese version with more fiber  and  as much (or more) flavor as the “classic  version” !!!

Yield: 1 serving

• 1/3 c. shredded 2% Cheddar cheese
• 2 slices  “Light” (low calorie) whole wheat bread
• 1 tsp. “light” tub margarine
• Nonstick cooking spray

1. Coat waffle iron with nonstick cooking spray.  (You may use a skillet if you wish).
2. Preheat the waffle iron.
3. While the waffle iron heats up, spread ½ tsp. margarine on one side of each piece of bread.  Sprinkle the cheese evenly on  one slice of bread –on the side that is “unbuttered”.  Top with remaining bread slice, keeping the “buttered” sides to the outside of the sandwich.
4. Place the sandwich in the center of the waffle iron and close the lid (the lid will not close completely).  Cook until the bread is browned and the cheese is melted, about 2 minutes.
5. Remove from the waffle iron and serve.
