What’s Happening At Healthy Neighborhood Stores This Month

Live Well Omaha Kids is a proud supporter of Food Demonstrations by The University of Nebraska Lincoln Extension office at Healthy Neighborhood Stores! In August, Healthy Neighborhood Stores patrons will learn how to make a healthy and affordable Red and Black Bean Salad and Simple Salsa! The food demonstrations will happen throughout the month – CLICK HERE for a complete schedule.

Can’t make it to the food demonstrations? Here are the recipes and nutritional information for the featured demonstrations in August:

Red and Black Bean Salad
8 servings
1 (15 oz.)  can black beans
1½ T. olive oil
1 (15 oz.)  can kidney beans
3 T. red wine vinegar
1 (11 oz.)  can mexicali corn
½ tsp. garlic powder
3 green onions, finely chopped
½ tsp. ground cumin
¼ tsp. salt
¼ tsp. pepper

  1. Empty cans of black beans, kidney beans, and corn into a colander.  Rinse well with cold water and drain.  Place in large bowl.
  2. Add the green onions to the beans and corn.
  3. In a small mixing bowl, combine olive oil, vinegar, garlic powder, ground cumin, salt, and pepper.  Stir well with a fork.
  4. Pour oil and vinegar mixture over beans.  Stir well.
  5. Refrigerate overnight before serving.

Nutrition Information per Serving: Calories 200, Total Fat 3.5 g (5% DV), Saturated Fat 0 g (0% DV), Cholesterol 0 mg (0% DV), Sodium 210 mg (9% DV), Total Carbohydrate 33 g (11% DV), Dietary Fiber 9 g (37% DV), Sugars 0 g, Protein 11 g, Vitamin A 4%, Vitamin C 8%, Calcium 4%, Iron 15%.

Simple Salsa
5 servings
2 (14.5 oz.) cans diced tomatoes, drained
¼ c. fresh parsley or cilantro, chopped
1 (4 oz.) can diced green chilies
2 T. lemon juice or lime juice
¼ c. green onion, finely chopped
⅛ tsp. pepper
1 garlic clove, minced

  1. In a large bowl, stir together all the ingredients until well mixed.  Cover and chill at least 4 hours.
  2. Serve with tortilla chips.
